01 · DER SCHLAG

Pounded to Parchment.

Each cutlet is worked by hand with a smooth mallet until it reaches the thickness of a playing card — uniform, without tears, without apology. The meat yields slowly. This is not something you rush.

02 · DIE PANIER

Three passes. No shortcuts.

Flour first — to give the egg somewhere to hold. Egg beaten with a splash of cold water. Then Semmelbrösel: fine, dry, freshly made. The crumb is pressed on gently so the coating stays loose, ready to billow in the pan.

03 · DIE PFANNE

Clarified butter. Nothing else.

The pan is wide, the butter deep, the heat steady at 160°C. The schnitzel goes in and the cook tilts the pan — the fat washes over the top in waves, cooking from every direction at once. The crust billows away from the meat like a golden pillow. That gap is everything.

DER TELLER · THE PLATE

THE VEAL

Milk-fed. Humanely raised.

We source our Kalbfleisch from a single farm in the Willamette Valley. The animals are milk-fed and slow-grown. The meat is pale pink, fine-grained, and yields exactly the way it should under the mallet.

THE CRUMB

Baked fresh. Ground here.

Semmelbrösel are not breadcrumbs from a canister. We bake Semmel rolls each morning, let them dry through the afternoon, and grind them fine before service. The difference is audible.

THE BUTTER

Clarified. Always.

Vegetable oil is not butter. Whole butter burns. Clarified butter — Butterschmalz — holds at the right temperature long enough for the crust to set golden without the milk solids turning. There is no substitute.
